Cuisines of North India

Life is a festival of colours for all Indians, especially for those living up North, where there is colour in everything- be it Ghattu Shyam's Mandir, Durga Pooja, a Christian wedding, or a beautiful jumma night. It's colourful everywhere, but what matters the most is how Indians enjoy these festivities. The best part of it all is the incredible food here that makes everyone drool.

Let's start with Jammu and Kashmir. For vegetarians, the best cuisine one can find is the shahi rajma, phulka, chawal and dum aloo served with ghee. Then there is the delicious non-vegetarian food which includes gravy made of cashews and almonds, goshtaba (mutton balls made in a thick mixture of curd), served with Rogan Josh (lamb made with Kashmiri red chilies). Jammu and Kashmir, being the gracious host, won't let their guests leave without some mouth-watering dessert. The phirni, sevayin, gulab gamun and lavas served in Jammu will leave her guest craving for more.

When in Kashmir you can't miss the ice cream and golas. Have a nice bucket full of ice cream, after all, jannat hai toh wahi hai!

The Rajasthani and Gujarati cuisines boast of some royal dishes including Dal baatti choorma, ghevar, Nava Ratna korma, aloo mattar ki sabzi, besan gatte ki sabzi, govind gatte, shahi gate and the heavenly gujja. If one wishes to eat authentic Rajasthani or Gujarati food, one should find a Marwari bhojanalay (eatery) and order the Rajasthani thali. Alternatively, if you wish to try a variety of cheap, tasty dishes, there is enough street food.

Madhya Pradesh and Chattisgarh, share a similar cuisine culture. Both the states are famous for their chakki ki shaak, mawa batti and shrikhand. It is here where one will find excellent poha, jalebi and samosa.

The outstanding food of Punjab, coupled with the generosity and the hospitality of those living there, makes it every foodie’s dream place! The states is famous for its makke di roti te sarson da saag, cholole bathure, kulfi, butter chicken and lassi.

These are just a few flavours of the Northern part of India. It is quite difficult to compile all the flavours of India under one head because of the country’s demographical and geographical differences. Do visit this part of India sometime-It has a lot in store for everyone!
